Evolution of Tasting Notes: Domus Aurea 2007

Updated: May 7, 2020

2010:

Dense and Intense Ruby Purple

Deep, dominated by elegant and spicy barrel aging. A background of fresh leather, truffles and minty notes rise powefully, blended with graphite and west stone hints. Ther comes the fruit made of black cherries bright blackcurrant.. Bread crust, aromatized tobacco and subtle sweet chocolate add to the complexity above menthol accents.

Shows a still evolving, fine and impressive structure. A noble presence of oak joins the whole balsamic entity. Fresh and fine tight tannis create a true armor, yet integrated to the flesh, than will surely be polished by time. The very tactile texture never prevails over the wine balance. Long and vibrant, the finish underlines the herbal and balsamic notes as well has the brightness of the unctuous dazzling fruit.

2018:

Bright ruby garnet slighty evolved.

Leather tones come first, then raspberries and jammy figs. Underbrush notes and wild mushrooms hints, with balsamic shades and subtle spicy oak.

The mouth starts full and straight and then come the tannic structure, still firm and a bit above. Same story about the finish, spicy and tannic.

Decant 2 hours, from now to 2020.
